 Tomatine Distillery is a distillery located in the Highlands and has been in operation since 1897. It is the largest distillery in Scotland and produces high-quality whiskey using bourbon casks and sherry-aged first-fill casks. Tomatin means ‘hill covered with junipers’ in Gaelic. Around the 15th century, people transporting livestock looked for whiskey to drink along the way, so it has been a place where bootlegging liquor has been made since ancient times. Water from a small stream called Altnapris, which flows from the Monarias Mountains, which are made of peat and red granite, is used to make whiskey. Using this water creates an aroma reminiscent of flowers, honey, and fresh fruit, and using high-quality peat creates a whiskey with a smooth, well-balanced taste.
